MUSHROOM FRIED RICE

 Mushroom Fried Rice


Fixings: 

  • Basmati Rice - 1 Cup 
  • Mushroom - 500 Gms Sliced 
  • Oil - 1/2 Tbsp 
  • Slashed Garlic - 1 Tsp 
  • Slashed Green Chili 
  • Onion - 1 No. Finely Chopped 
  • Capsicum - 1 No. 
  • Pepper 
  • Vinegar - 2 Tsp 
  • Soy Sauce - 2 Tsp 
  • Schezwan Paste - 2 Tbsp 
  • Spring Onion Greens 
  • Water 
  • Salt 
Technique: 
  • Take 1 cup of basmati rice. 
  • Flush it with water two or multiple times. 
  • Take a pot and add enough water to cook the rice. 
  • When the water reaches boiling point, include 1/2 tsp of salt. 
  • Cook the rice till it is 3/fourth done. 
  • Strain the rice and leave it aside. 
  • Take a wide container and include 1/2 tbsp of oil. 
  • Include 1 tsp finely cleaved garlic, 2 finely slashed green chilies, 1 huge onion finely hacked. 
  • Saute till the onions turn straightforward. 
  • Include 1 capsicum cut into wedges. 
  • I have 500 gms of mushrooms, cut into thick cuts. 
  • Add them to the container. 
  • Saute the mushrooms for 2-3 mins. 
  • Season it with 1/2 tsp of salt and some new pepper and saute. 
  • Include 2 tsp of vinegar, 2 tsp of soy sauce, 2 tbsp schezwan glue. 
  • Saute the mushrooms till they are very much joined with the sauces. 
  • The mushrooms are cooked well and the sauce is thickened, include the 3/fourth cooked rice and blend well. 
  • Be mindful so as not to break the rice while blending. 
  • At last, include spring onion greens and serve the mushroom seared rice hot.
