Sweet Chili Plum Pickle

Ingredients:

  • Crude Plums – 500 grams
  • Garlic – 15 cloves
  • Ginger – 50 grams
  • Curry Leaves – 4 twigs
  • Mustard Seeds – 1 tsp
  • Fenugreek Seeds – 1 tsp
  • Stew Powder – 2 tbsp
  • Turmeric Powder – 1 tsp
  • Asafoetida (Hing) – ½ tsp
  • Sesame Oil–½ cup (125 ml)
  • Vinegar – ½ cup
  • Salt – to taste
  • Waggery or Brown Sugar – 2 tbsp

Method:

  • Finely slash Ginger and Garlic
  • De-seed and cut Plums into 4 quarters, and each quarter into 2 pieces
  • Blend Chili and Turmeric Powders in a modest quantity of Water
  • Warmth Oil in a substantial bottomed container, lower fire and include Mustard Seeds, permit splutter.
  • Include Fenugreek seeds and Curry leaves, mix for 1 moment.
  • Include Ginger and Garlic, sauté for around 10 minutes on medium fire.
  • Include the powders glue and mix for 4 minutes.
  • Include the Plum pieces, mix well, check for Salt, cook on medium fire for 10 minutes.
  • Include Waggery or Brown Sugar and Hing, expel from fire.
  • Permit cooling.
  • In a different container, bring to bubble Vinegar and blend in the pickle.
  • Permit cooling. Spoon into disinfected containers, seal, name and refrigerate. (In a perfect world permit the pickle to develop and smooth for around multi week.)
